Kefir Chia Pudding

Creamy, thick, and easy to make ahead, this kefir chia pudding is a simple breakfast that can be prepared the night before. Serve it chilled with fresh berries and your favorite toppings.

Ingredients

  • 1 cup plain whole milk kefir
  • ¼ cup plain Greek yogurt
  • 3 tablespoons chia seeds
  • 1 tablespoon maple syrup
  • ½ teaspoon vanilla extract
  • Pinch salt
  • Fresh strawberries for serving
  • Fresh blueberries for serving
  • Sliced almonds for serving

Instructions

  • In a medium bowl, whisk together the kefir, Greek yogurt, maple syrup, vanilla extract, and salt until smooth.
  • Stir in the chia seeds, making sure they are evenly distributed.
  • Let the mixture sit for 10 minutes, then stir again. This second stir keeps the chia seeds from settling or clumping.
  • Divide the mixture between two jars or small containers.
  • Cover and refrigerate for at least 4 hours, preferably overnight.
  • Stir before serving. Top with fresh strawberries, blueberries, and sliced almonds.

Notes

  • Do not skip the 10-minute rest and second stir. It is the difference between an even pudding and a thick layer over a watery one.
  • The pudding looks loose for the first hour. Do not add more chia. It keeps thickening as it chills.
  • If a jar has gone too thick after a few days, stir in a splash of kefir to loosen it.
  • Store covered for up to 5 days. Add berries and nuts at serving.
  • Nut free: swap the almonds for pumpkin or sunflower seeds.
