Pizza Muffins

Soft, cheesy pizza muffins baked in a muffin tin with tomato paste, two cheeses and turkey pepperoni. Freezer-friendly, and they stay tender cold for lunchboxes.

Ingredients

Muffins

  • 1½ cups all-purpose flour
  • ¼ cup fine cornmeal
  • 2 teaspoons baking powder
  • 2 teaspoons Italian seasoning
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 3 tablespoons tomato paste
  • 3 tablespoons olive oil
  • 1 cup low-moisture mozzarella cheese shredded
  • ⅓ cup parmesan cheese grated
  • ⅓ cup mini turkey pepperoni or chopped turkey pepperoni slices

For topping

  • 3 tablespoons pizza sauce plus more for dipping
  • Extra shredded mozzarella cheese

Instructions

  • Preheat the oven to 375°F. Grease a 12-cup muffin tin well, working into the sides and edges.
  • Whisk the eggs, milk, tomato paste and olive oil in a large bowl until smooth, with no orange streaks remaining.
  • In a second bowl, whisk the flour, cornmeal, baking powder, Italian seasoning, garlic powder, onion powder and salt.
  • Add the mozzarella, parmesan and pepperoni to the dry ingredients and toss until coated in the flour mixture.
  • Pour the wet ingredients into the dry and stir until just combined. The batter will be thick and scoopable. Do not overmix.
  • Divide the batter between the 12 cups, filling each about three-quarters full.
  • Spoon about ¾ teaspoon of pizza sauce onto each muffin and swirl lightly into the surface with a knife tip. Sprinkle with extra mozzarella.
  • Bake 18 to 22 minutes, until the tops are set and golden and a toothpick inserted in the center comes out clean. Start checking at 18 minutes.
  • Cool in the pan 5 minutes, then transfer to a wire rack.

Notes

  • Use low-moisture shredded mozzarella, not fresh. Fresh mozzarella releases too much water into the batter.
  • Tomato paste rather than sauce is what carries the pizza flavor. Sauce is mostly water and thins the batter without adding much taste.
  • Olive oil rather than butter keeps the crumb soft when the muffins are eaten cold.
  • Tossing the cheese and pepperoni in the dry ingredients keeps them suspended instead of sinking.
  • Refrigerate in an airtight container up to 4 days, or freeze up to 2 months. Reheat for 15 to 20 seconds from chilled, 30 to 45 seconds from frozen.
  • For mini muffins, use a 24-cup mini tin and bake for 11 to 13 minutes.
