Strawberry Kefir Popsicles

Equipment

  • Popsicle molds (6-cavity)
  • Wooden popsicle sticks

Ingredients

  • cups plain whole milk kefir
  • cups fresh strawberries hulled, divided
  • 3 tablespoons honey divided
  • 1 teaspoon vanilla extract

Instructions

  • Finely dice ½ cup of the strawberries. Toss with 1 tablespoon of the honey and set aside to macerate.
  • Blend the remaining 1 cup strawberries, kefir, remaining 2 tablespoons honey, and vanilla until smooth, about 30 seconds.
  • Stir the diced strawberries and their juice into the blended base. Do not blend.
  • Pour into 6 popsicle molds, leaving ¼ inch headroom. Insert sticks.
  • Freeze at least 6 hours or overnight, until completely solid.
  • To unmold, run the mold under warm water for 20 to 30 seconds and pull gently on the stick.

Notes

Maple syrup substitutes 1:1 for honey. Store unmolded pops wrapped individually in an airtight container in the freezer for up to 2 months.
